So who doesn't love a girls' night full of picking fun at a reality tv show, dinner, wine, and of course something sweet?! At the past meetup of our "The Bachelor" night soiree, the girls had suggested I bring some cupcakes! So I decided to keep with the theme - a rose ceremony of cupcakes! And they were delish!
Oh and apparently photography and red is quite the challenge, to say the least!

Having a meeting with a room full of meteorologists and you said that you'd bring something sweet to share? Here's an idea - How about a 7-day Forecast made out of cupcakes!! I had a few other ideas as far as decorations, which I will eventually make, but this idea just seemed like the way to go! For the square cupcakes I used one of those single brownie baking pans, and voila - square cupcakes!
Before the holidays it was time to take some downtime with some girlfriends and celebrate the holidays, and one of the girl's birthdays! Her flavor cupcake is red velvet and being that I've never made a red velvet cake, let alone tried one, I searched high and low for a recipe. I decided to go with Martha Stewart's recipe, and it was a hit! For decoration I added snowflake cupcake toppers I made.
Other items on the dessert table were s'more marshmallow pops and some sugar cookies. For the marshmallow pops, just stick a lollipop stick into the marshmallow, dip in melted chocolate and dip in any toppings you like. In addition to graham cracker crumbs, I also dipped some in colorful Christmas sprinkles, and others I left just plain chocolate.
I'm in the process of learning the art of decorating sugar cookies with royal icing. I've worked with royal icing in cake decorating, so I don't think it'll be that difficult, but it'll take some practice for sure.
And as 2013 quickly came to a close, a new year began.
I had bigger plans for this year's Halloween cupcakes that I was bringing into the office, but when you bake all day and then make the frosting and still have to decorate, it just gets exhausting. I had to do it all in one day because I had a quick turnaround at work. So here they are - fancy swirls and a witch's hat made out of a cookie and hershey kiss.
On top of the cupcake madness, a few days ago I received this picture from a lady who purchased some Halloween cupcake toppers from my Weather It's Sweet etsy shop. This picture totally made my day! It's just so cool and oddly enough rewarding to see something that you made put to use by a complete stranger! She said everyone loved them, and it sounds like they had a great party!
I've been going back through my blog, trying to weed out some of the posts I made to get this blog back to the first intentions I had for it - baking, cooking, crafting, etc. In doing so, I realized that I never made a post about my Wilton Cake Decorating Courses 2 or 3. Opps! For this post, we'll look at course 2!
Course 2 explores Flowers and Royal Icing. You know that hard icing on those beautiful cookies?! The hard icing?! That's royal icing. It's basically buttercream icing without, the butter!
Thought not really used in Course 2, this course started off by learning about making a fondant pansy and button flower.
Moving on to the rest of the courses, there was a lot of practice making roses, apple blossom's, primrose's, rosebud's, daffodil's, violet's, lily's, and the overall technique of floral cake designs. As for borders, we learned about the reverse shell and the basketweave,
And for my final cake, I took all the flowers I had made (except the rosebud and lily), and made somewhat of a bouquet, with a basketweave border! I was quite pleased with it!
I'm not a huge chocolate fan - yes, you read that right. But all females love chocolate right?! Nope. I don't not like chocolate, but if I'm going to have cake/cupcakes, I prefer vanilla cake, but chocolate frosting is fine.
One of my girlfriends celebrated her birthday this weekend, and she absolutely loves chocolate. She never met a piece of chocolate she didn't like. I've made chocolate cupcakes here and there, but to be honest, they were mostly from a box, because I never came across a recipe I really cared for - but that all changed this weekend. With the power of google, I came across Sally's Baking Addiction, and her Death by Chocolate Cupcakes recipe looked decent, so why not give it a whirl! Well I did, and they were fabulous!! I didn't change a thing, so if you want to give the recipe a try, go for it! You won't be dissapointed!
The week before I made these cupcakes, I also made some Pumpkin Spice cupcakes. I'll be honest, the cupcakes were from a mix - a Williams-Sonoma mix that was on sale. Being that I love Pumpkin, I couldn't pass up the sale. After they were baked, I made the cream cheese frosting suggested by Williams-Sonoma and sprinkled some pumpkin pie spice on the top of the frosting - and they were PHENOMENAL! The guys at work said they were the best cupcakes I had brought in - not too sweet and just...great! Now I just need to find a similar pumpkin spice cupcake recipe, and we'll be good to go!
I've been keeping busy lately, and I'm a-ok with that. Sometimes I let Facebook take over my life, and as much as I'm a social butterfly and I want to know what's going on with everyone, I'm realizing I'm just letting time pass me by. So here's what I've been up to, in no particular order...

Boot Camp. Week 3 started this morning - as in 6am this morning. Ahhh it sucked getting up so early, but afterwards it was really nice to know my workout was done!! I've been going to the evening sessions, and everyone's really cool - but this was my first time with the morning group (just because of my work schedule). They were a much quieter group - but then again it was dark out too, so I could barely see anyone's faces.
I don't like to buy cupcake mixes, but Williams-Sonoma had their pumpkin spice mix on sale for 75%, so I thought why not - 'tis the Fall season! I allowed myself just 1. The rest go to the coworkers later today.
Me and Bibis Ellison! Bibis and her band are a HUGE hit around town and surrounding areas. Her voice is AWESOME - a mix between Adele, Amy Winehouse, and...well you should just listen to it. She's a total sweetheart! I felt silly asking her for a picture, because everyone in this city knows her that it's not like people are running up to her wanting autograph or anything. I read her blog and it actually looks like the band auditioned for The X Factor a few years back, but didn't make it. I don't know - I think they're awesome! I told her I loved her voice and her confidence to get up on stage and sing - she then asked if I sing, and I said yes, but I'm too chicken to get up on stage. She told me "Girl just do it - you can definitely do it, I know you can." Who knows, maybe one day! And once on-stage - she dedicated a song to me!! I couldn't believe it! It was about don't worry what people think, do what makes you happy!
I surprised Dad for his birthday with tickets to the Panthers vs. Giants game - just 13 rows up! It was a blast to spend some time with him! Even though he's more of a Giants fan than Panthers, I got him to wear his Panther's gear, and it was a good thing - the Giants never showed up, and the Panthers won 38-0.
If you know me, you know that I've been a Backstreet Boy's fan since the beginning. They just celebrated their 20th anniversary - so obviously it's been a longgg time! I've been to several of their concerts, but always in nosebleed or so far back. Well last night that all changed! I not only was in the front row of their fan pit (between the stages), I also went to soundcheck...AND MET THEM!!! All thanks to a college friend, who has been going to their concerts and meeting them for years now! Seriously - I'm speechless and really have no words. My friends knew once I posted a few pictures online, some even mentioned what a dream come true this was for me - and let me tell you. It. was.
